Low Carb Breakfast Muffin

Seriously, this only takes a few minutes to put together while you wait for your coffee to brew, or your bacon to crisp. Super quick and easy, and it makes a yummy breakfast sandwich with egg, bacon and a dash of low sugar sauce.
Ingredients
(Makes 1 muffin)
1/4 cup almond meal
1 egg
1tbsp olive oil
1 tsp coconut flour
1/2 tsp sweetener
1/4 tsp baking powder
Method
1. Mix the dry ingredients together in a round, microwave safe dish like a ramekin, a small bowl or tupperware container, basically anything that will give you the shape and size of a breakfast muffin. Add the oil and egg, and mix everything together well to combine.
2. Microwave for 1 minute, then again for thirty seconds at a time until just cooked through. The time will depend on your microwave, but for me it usually takes 1 and a half minutes.
3. Carefully remove from the dish, slice in half horizontally and fill it with some bacon, eggs and your desired condiment.
